Cinnamon Banana Crumb Bread

IMG_1880

This is truly the most amazing banana bread I’ve ever tasted! Its not original with me but I adapted the recipe – and oh boy, is it ever delicious! I love how totally moist it is and the crunchy, buttery crumbs are the perfect thing to top it off.

Needless to say, (with some help!) we devoured an entire loaf, fresh from the oven, in minutes.  And it wasn’t hard either. {we must have been hungry!} In times like that, I desperately wish I could say it was Trim and Healthy Mama! LOL. =) Oh, and making it was way more fun than cleaning my house….. the house can always wait.

The dirt will still be there. It ain’t going no where!

Baking is virtuous too.

  • 1 cups buttermilk
  • 5 overripe bananas, mashed
  • 3 3/4 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1 1/2 teaspoon cinnamon
  • Crumb Topping:
  • 1  cup powdered sugar
  • 1  cup all purpose flour
  • 1/2 cup unsalted butter, melted
  • 1  teaspoon cinnamon
  • pinch of salt
  • Directions:
  • In a large mixing bowl, beat together the sugar, egg and vanilla until combined. Add the butter and beat until smooth. Beat in the buttermilk and bananas.
  • In a separate bowl, mix together the flour, salt, baking soda, baking powder and cinnamon. Slowly stir the dry ingredients into the wet until all the flour is incorporated. Spray 3 (8.5×4.5) loaf pans with non-stick spray and pour in the batter.
  • Make the crumb topping by combining the powdered sugar, flour, cinnamon salt and melted butter. Using your hands, crumble the mixture over the batter in the pans. Bake in a pre-heated 350 degree oven for 45 – 50 minutes or until a toothpick comes out clean.

  2. Just made this bread and was told by my husband to pitch all other banana bread recipes. Those crumbs are the selling point of the bread, I think.
