Garlic Shrimp Alfredo

Today I had one of those moments- where I looked at my 1 year old son and had an overwhelming love wash over me for him. If you’re a mother you know what I’m talking about. Its a feeling like no other. Sometimes I still can’t believe that its real. That he’s mine.

I got to thinking about how I express my love to such a little guy. Of course theres the cuddles, the stories, the swing rides, the countless things that all mommies of little boys do to make their life complete. But being hungry like I constantly am (and no I’m not pregnant! Haha) I got to thinking about food. I know it might sound crazy but I seriously believe that we as moms can express our love to our families through food! Not only our families, but a neighbor down the street.

Giving is loving.

And giving food is no exception. Its something we do everyday, actually, THREE times a day. And in the mundane of life it can feel like just another chore. Do you ever stare into the refrigerator with a blank gaze and say, “What on earth should I make tonight?” I know that feeling all too well. (I always say that DECIDING what to make is half the work!)

But, let me remind you. Even if your slapping something together like toasted cheese sandwiches in the midst of a busy day. You are showing LOVE to those you’re feeding. As you slice, lather, and fry, you are giving of your time and energy to love them. You may not always feel appreciated for your labors but trust me, a house without a cook would not be a home.

So tonight – show your husband some love and whip up his favorite dessert. Or the next time you walk a loaf of bread to your lonely neighbor, know that you are showing love. {“And as you’ve done it unto the least of these my brethren, you have done it unto Me.”}

Those were some of the thoughts behind this Garlic Shrimp Alfredo. Stan absolutely loves sauces and pastas- and since we had the luxury of shrimp, I decided to show some love through food. Haha. And it was a smashing hit. Even the little guy was digging in with both hands. =)

Garlic Shrimp Alfredo

  • Servings: 3-4
  • Difficulty: easy
  • Print

10 oz. Dry Fettuccine (cooked according to package directions)

  • SAUCE:
  • 2 oz. cream cheese
  • 2 tbsp all-purpose flour
  • 1 tsp minced garlic
  • 1 1/2 cups milk
  • Whisk above ingredients in small saucepan. Bring to a boil. Whisking constantly. Reduce heat and stir until thickened. 
  • Add: 1 cup shredded parmesan cheese
  • 1 tsp parsley flakes
  • 3 tbsp butter
  • salt & pepper to taste
  • (Opt. dash tabasco sauce  + a sprinkling of paprika)
  • Meanwhile, slice and fry:
  • 3 sweet peppers (or 1 bell pepper)
  • 1/2 cup chopped onions
  • 3/4 cup sliced mushrooms
  • 1 tbsp butter
  • When vegetables are finished, prepare shrimp.
  • 20-25 large cooked shrimp, (peel & take tail off)
  • 3 tbsp butter
  • 1 tsp lemon juice
  • garlic salt
  • Weber Seafood Seasoning (Opt.)
  • Fry over medium heat for around 8-10 minutes. Arrange on plates in this order, pasta, prepared alfredo sauce, cooked peppers, onions, mushrooms, & shrimp. Enjoy!!!
