Here’s a kid friendly recipe! Perfect for a snack at any hour of the day. This recipe is fast and easy to make and the kiddos can join in the fun because there’s not much that can go wrong.
My oldest sister, Andrea, has five handsome little men, all in a row. If you know anything about growing boys, you’ll know that they are always hungry! It was at her house that I was introduced to this delicious snack. The boys take turns helping with the baking and they have turned out some delicious things! Speaking of mothers….. Andrea is one that I admire greatly and truly long for her mothering abilities! =) She is so calm and consistent. She doesn’t get flustered when the door was left open and the goat leaves tracks on the freshly washed floor. Or when the little helper spills peach juice in the fridge, which makes everything around it a sticky mess. I think God knew what He was doing when He blessed her with five boys and one sweet, beautiful little girl. =) Andrea, you’re one my role-models! You’re boys are maturing into fine young men.
High Fiber Balls
- 1 cup honey
- 1 cup chunky peanut butter
- 1/4 tsp salt
- 2 1/2 cups raw quick oats
- 1/2 cup bran flakes, crushed (Opt.)
- 1/2 cup slivered almonds
- 1/4 cup walnuts, chopped
- 1/2 cup shredded coconut
- 1/4 cup dried cranberries or raisins
- 1/4 cup white or chocolate chips (Opt.)
In small saucepan (or microwave safe bowl!) heat honey, peanut butter, and salt until melted. Remove from heat. Add oats, bran flakes, almonds, coconut, and cranberries. Stir. Cool mixture completely.(The mixture is much easier to roll when cooled) Add white chocolate chips and stir until just combined. Roll into balls and place on baking sheet. Chill 30 minutes before serving. Keep refrigerated.
