Skinny Peanut-butter Chocolate Fudge

Who knew skinny fudge could taste so good? I made this earlier in the week and any time my sweet tooth is yelling for attention, I reach for one of these. It satisfies my chocolate and peanut butter craving both at the same time.

Its creamy and smooth.

And deliciously rich.

Easy to make.

And keeps you skinny.

Whats not to love about it? =)

Skinny Peanut-butter Chocolate Fudge

  • Servings: 16
  • Time: 30mins
  • Difficulty: easy
  • Print

  • 1/2 cup butter
  • 1/2 cup coconut oil
  • 1 cup peanut butter (Natural, no added sugar)
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 4 oz cream cheese, softened
  • 7-8 tbsp ground Erythritol
  • 2 tsp finely ground coffee beans (Opt. but I love the flavor the coffee gives it!)
  • 6 tbsp cocoa
  • In medium saucepan melt butter, coconut oil, and peanut butter. Remove from heat and add remaining ingredients. Whisk until smooth.
  • Stir in:
  • 1 cup slivered almonds
  • 1/2 cup crushed walnuts or pecan
  • 1/4 cup raisins (Opt.)
  • Line 8×8 baking dish with wax paper. Pour chocolate into pan. Freeze.
  • In separate saucepan melt:
  • 1/2 cup peanut butter
  • dash salt
  • 2 tbsp coconut oil
  • When just melted, remove from heat and spread over hardened fudge. Sprinkle with almond slivers. Freeze again until firm. Remove from pan and cut into squares. Store in refrigerator.
