Strawberry Dream Dessert {THM}

Okay so I had this the other week at Charlene’s house and then again at our church picnic and it was a.m.a.z.i.n.g. Charlene brought it as a treat especially for the Trim-Healthy-Mama ladies (not sayin’ I am one of those ladies) but I knew it was going to be posted here on my blog and I figured the more I eat of it, the better I can describe its goodness. Cheesy Zucchini Rice Casserole

This has been my go-to casserole this summer on busy days and I haven’t gotten tired of it yet! Its filled with so many delicious summer, vegetables and is a snap to put together. You can serve it solo or I like to serve it with Grilled Chicken and a lettuce salad.

I froze zucchini in chunks simply for this recipe so that I can keep the taste of summer just a little bit longer.
