Chocolate Hazelnut Pie {THM}

This {THM} Chocolate Hazelnut Pie is almost too good to be true! Charlene is at it again. She combines coconut milk and melted chocolate to create a smooth, rich filling and places it on a nutty crust of roasted hazelnuts.

Chocolate Hazelnut Pie {THM}

  • Servings: 6-8
  • Time: 2hr 30mins
  • Difficulty: easy

Begin by roasting 1 1/2 cups hazelnuts. Preheat oven to 300º. Spread hazelnuts out onto pan. Roast for 15-20 minutes in preheated oven. Cool. Rub skin off – not every piece will come off but thats okay.

  • Chocolate Pudding:
  • 13.5 oz can Coconut Milk
  • 6 oz Unsweetened chocolate (or Lily’s- if using Lily’s chocolate use less sweetener below)
  • In small saucepan, whisk coconut milk and chocolate until melted. Pour into blender.
  • Add:
  • 1/4 cup Erythritol
  • 1/4  cup Xylitol
  • 6 tbsp Gentle Sweet
  • 1/2 tsp Xanthan Gum
  • 1 scoop Whey Powder
  • 1 or 2 dunks stevia (to taste)
  • 1 tsp vanilla
  • Blend until creamy. Set aside.
  • CRUST:
  • 1 cup hazelnuts (finely chopped)
  • 1 tbsp cocoa powder
  • 1/4 tsp salt
  • 1 tbsp coconut flour
  • 1 cup almond flour
  • 5 tbsp sweetener
  • 5 tbsp butter or coconut oil (I used half of each)
  • Press into greased pie plate. Bake in preheated oven for 12-15 minutes. It will be wet but cool it and when chilled it will set.
  • Fill pie crust with cooled chocolate pudding. Refrigerate for at least 2-3 hours or until set. Just before serving, whip heavy whipping cream, dash vanilla, and lightly sweeten. Spread over filling. Garnish with shaved Lily Chocolate bar and roasted hazelnuts.

  1. You two make me feel my recipes are complicated☺️🙈!you can use sugar instead…also just regular chocolate chips..but i love eating dessert and knowing no sugar spike!🙈
