Strawberry Dream Dessert {THM}

Okay so I had this the other week at Charlene’s house and then again at our church picnic and it was a.m.a.z.i.n.g. Charlene brought it as a treat especially for the Trim-Healthy-Mama ladies (not sayin’ I am one of those ladies) but I knew it was going to be posted here on my blog and I figured the more I eat of it, the better I can describe its goodness. Good logic, right?

I thought so too.

What I can tell you is that the Strawberry filling is light, fruity, and refreshing overlaying a “graham-like” crust. Its like a dream its so good. And its healthy too.

I thoroughly enjoyed every bite.

Strawberry Dream Dessert {THM}

  • Servings: 20
  • Difficulty: easy
  • Print

  • CRUST:
  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp unflavored gelatin
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 6 tbsp butter
  • 2 tbsp honey
  • 2 tbsp xylitol
  • 2 tsp vanilla
  • Preheat oven to 350 degrees.
  • In small saucepan over medium heat, melt butter and honey. Remove from heat and add remaining ingredients. Press into 9×13 pan and bake for 10-12 min. (Browning it more will make it taste like graham crackers.) Cool. Meanwhile, make strawberry filling.

STRAWBERRY FILLING:

1 1/2 cups water
3 cups frozen strawberries
2 TB+ 1 tsp gelatin
8 oz cream cheese, softened
3 TB lemon juice
1 1/2 cups heavy whipping cream
1/4 cup gentle sweet
Two donks stevia
1/4 cup erythritol
Cook together strawberries and water. Stir the gelatin and lemon juice together to dissolve. Stir it in strawberry mixture while it simmers. Blend a little so berries arent big and lumpy with hand blender. Cool . Whip cream cheese and heavy whipping cream. Add remaining ingredients and strawberry mixture. Pour over crust. Chill until set.
Optional: add a cup or two fresh strawberries.
