Chicken Mozzarella Lasagna Roll-Ups

Lets talk pasta. My man is a lover of all things pasta. Makes life easy, right? But the sauce is the boss. He prefers a white sauce over spaghetti sauce and believe it or not, traditional lasagna is not his favorite dish in the world. (Although it ranks high on my list!)

All that to say, I kept looking at the lasagna noodles in my cupboard wondering what I could do with them.

I had heard about Alfredo Roll-Ups using lasagna noodles but had never given them a try. So I decided to experiment with a cheesy-mozzarella sauce, giving this recipe my own twist. It was delicious! Little toddler man loved them too which is always a plus since he’s going through a very picky stage right now.

We’ll call it a “stage” and hope he snaps out of it soon.

I served these with refreshing coconut-raspberry-lime smoothies. At this “stage” in my pregnancy I’m craving all things fruit. Fresh fruit, frozen berries, smoothies….All the time. I guess toddlers aren’t the only ones who go through stages! =)

Speaking of the pregnancy. We found out we’re having a girl! =) Yay. You have no idea how thrilled I am. Although, two nights ago Stan had a vivid dream that we actually had a boy. So, one can never know until the baby actually enters this world. But… the thought of a girl has me tickled pink.

Here’s a little testimony of God’s miracle to us…I’ll try to keep it short. The doctors had me very worried at the ultrasound – said the baby has a heart defect, baby’s heart isn’t normal, fluid build-up, and some issues with the lungs. They were already discussing surgery immediately after the birth and it was all sounding very overwhelming to me. Stan was working in a no phone service area so I felt very alone. I thought about calling my mom but didn’t want to have her worried too and I knew I’d break down and I needed to be strong. The doctor scheduled another ultrasound for an 1 1/2 later with a pediatrician who works on abnormal baby’s hearts so that he could tell us exactly whats going on. He told me not to be worried until after we’ve heard his opinion but by that time he already had my mind and heart spinning.

I had planned to visit a friend of mine that lives a few miles from the hospital over lunch so I went to her house in-between the two appointments. As soon as I shared with her the results of the ultrasound she was so filled with faith telling me that God is in control of this situation and is taking care of my little baby. She said that “God is putting you through a test and He just wants you to trust Him.” She went on to share a few stories of miracles God did in her own life, a recent one with her baby as well. She encouraged me so much during that hour and I went back to the hospital with renewed faith and trust in God.

I prayed much for my baby during that time and had texted a few family members (including both of our moms!) to pray as well. I believe very strongly in a mother’s prayer! =)

To make a long story short, after an agonizing wait in the waiting room and another agonizing wait as the nurse took the ultrasound, it was such a relief when the pediatrician shook his head and said, “I don’t know what that first doctor saw but your baby’s heart is completely normal!” I praised God. And still continue to thank Him and praise Him.

We don’t know exactly what happened in that hour but we do feel so loved and hugged by God. I hope this little story encourages you in whatever you are facing. God is in control and He wants to show Himself powerful in our lives if we will only ask. God is so good!

Chicken Mozzarella Lasagna Roll-Ups

  • Servings: 6 Roll-Ups
  • Difficulty: easy
  • Print

  • 6 lasagna noodles
  • 5 slices bacon, fry & crumble
  • 1 large chicken breast, cut into small chunks
  • (seasonings for chicken!)
  • 1/2 onion, sliced
  • 3/4 cup chopped sweet or bell peppers
  • Bring water to boil and cook lasagna noodles for 9 minutes. Cool with cold water. Drain. Place on paper towel to dry.
  • Meanwhile, cook bacon until crispy. Remove from skillet.
  • Place onions and peppers in skillet with bacon grease. Sauté until almost tender. 
  • Chop and fry chicken until soft and tender…seasonings to your taste.
  • SAUCE:
  • 2 oz. cream cheese
  • 2 tbsp all-purpose flour
  • 1 tsp minced garlic
  • 1 1/2 cups milk
  • salt to taste
  • Whisk above ingredients in small saucepan. Bring to a boil. Whisking constantly. Reduce heat and stir until thickened.
  • Add: 1 cup parmesan cheese
  • 3 tbsp butter
  • 1/3 cup mozzarella cheese
  • Remove from heat and whisk until cheese is melted and sauce is smooth. Spread a thin layer of white sauce in bottom of 8×8 pan. 
  • On each noodle, place a very thin layer of sauce. Top with chicken, onions, peppers, and bacon. Roll up carefully. Place seam side down in pan. Cover with remaining sauce and sprinkle with bacon.
  • Bake at 350º for 25-30 minutes or until bubbly and hot.

    And I also experience a distinct pang of jealousy that my brother gets to enjoy this pasta dish…while all I get is some very appetizing looking pictures. 😄
