White-Chocolate Berry Cheesecake {frozen}


This frozen cheesecake whips up in no time and is pretty enough for guests. There’s nothing I love more than when my house is filled with friends! Yesterday was one such day. We had three families for Sunday dinner and then a few friends for pizza in the evening. I love full, happy Sundays!

All I can say, is give this one a try! I don’t think you’ll be disappointed. Its light and creamy, fruity, and has just a touch of white chocolate. Pairs perfectly with a hot mug of coffee with cream.

I love desserts that can be made on ahead, making Sunday meal prep so much easier…. I put this together on Friday and then pulled it out Sunday noon to garnish! How slick is that?

Anyone out there have any potty training tips? =) I decided today was the big day to introduce the potty to Declan. Sounds good, right? Haha. We’ll just say it didn’t go too well. I think I’ll give him a few more days….maybe weeks…months….I make no guarantees of when he’ll be trained. LOL.

Its one of the things I’ve dreaded most about parenting. It just looks so hard….and he proved me right. There’s always another day.

White-Chocolate Raspberry Cheesecake {frozen}

  • Servings: 10-12
  • Difficulty: very easy
  • Print

  • 2 rows oreos from package
  • 2 tbsp melted butter
  • Crush oreos in blender. Mix with melted butter and press into springform cheesecake pan.
  • 16 oz cream cheese (softened)
  • 2 cups heavy whipping cream
  • 1/2 can sweetened condensed milk (Opt. depending how sweet you like it!)
  • 1 cup raspberries (I used frozen and thawed in microwave, mashing with fork)
  • 1/2 cup white chocolate/1 tsp coconut oil (melt, stirring until smooth)
  • In mixing bowl, beat cream cheese until smooth. Add heavy cream and whip until reaches creamy consistency. Add sweetened condensed milk, mashed raspberries, and melted chocolate. Stirring until combined. Spread evenly over crust. Cover and freeze until hardened. Remove from freezer an hour before serving and garnish with:
  • Additional Whipped Cream
  • Fresh Raspberries or Blackberries for garnish
  • 1/2 cup white chocolate chips/1/2 tsp coconut oil (melted)
  • Spread a layer of whipped cream over cheesecake. Sprinkle with additional fresh berries. Drizzle with melted chocolate. Let stand for at least 30-60 minutes or until slightly softened.
