If you haven’t discovered Chia Seeds, I would highly recommend you give them a try! This is my new favorite way of eating them…creamy, healthy, and delicious. I love serving this on the side for breakfast with any kind of fresh fruit. It also makes a great snack. Trust me. I know!
Chia seeds are a great source of fiber, omega-3 fatty acids, and other minerals. Or at least thats what I’ve read. Do your own research if your curious on the health benefits! =)
This is another one of those things that you need to make the night before, making the morning a whole lot less chaotic.

God’s been speaking contentment to me the last few weeks. And I just haven’t been getting it. Actually to be painfully honest, last night I realized I’ve been resisting it. I’m afraid if I completely let go of my dreams and choose to rest, waiting on Him to open the doors, we’ll be sitting here in the same little house for the next 5 years. But I need to be okay with that. And I choose to be okay with that.
Its hard. This thing of letting go and giving dreams to God. I know if its His will, He’ll bring it altogether in His timing and it’ll be so much more beautiful than if I have my hands messed in it.
I’m such a visionary and when I see an opportunity I want to JUMP ON IT, right then and there. I don’t always think through things very well because I’ve already boarded the train. So this thing of patience, and waiting, is a lesson I need to learn. When I think of a truly content person, my mind automatically goes to my mom. She has a spirit of gratefulness and contentment that I wish could have been magically passed down. But I guess its one of those things you have to learn on your own.
I read an incredible blog post yesterday (from Momastery.com) called, “Give me gratitude or give me debt.” It spoke right to what I’ve been fighting and the truth cut. If you have the time, its a worthwhile read.
Today I choose JOY! I choose to look at what I have and be not only content but GRATEFUL.

Sunrise Chia Pudding
- 13.5 oz (1 3/4 cup) coconut milk (full fat)
- 1 1/2 cups plain yogurt
- 3/4 cup fresh squeezed orange juice
- 2 tsp lemon juice
- 1/2 cup chia seeds
- 1 tbsp gentle sweet
- 1 tbsp honey (opt.)
- In small bowl, whisk all ingredients together until smooth. Cover and refrigerate overnight or at least 8 hrs. In morning top with fresh fruit! Enjoy!
