Chocolate Pecan Bars {THM}

If there ever was a recipe you Trim and Healthy Ladies need to make tonight yet, its this one! These showed up on my doorstep earlier this week and were they ever amazing! Charlene made them and had them delivered. How sweet is that?

Stan was gone for a day so I almost single-handedly ate the entire pan. When he did get to try them, lets just say, there weren’t too many left! Haha. But he told me I must get the recipe.

I have an unusually strong sweet tooth right now and these were perfect timing to satisfy my craving. If you think pregnancy cravings are bad, well, I would suggest that nursing cravings and hunger pains are just as severe! =)

We had two full weeks of delicious baby meals brought straight to our house by church ladies a.k.a. my friends. It was so fun to experience everyones cooking styles and flavors. No two meals were the same! Ranging from duck all the way to steak, back to chicken and then to shrimp. We definitely don’t eat that good every night. =) Thank you ladies!  I enjoyed every bite and would take them all over again even though it is fun to be back in my kitchen. Our meals went from a full 3-course down to about 1.  Haha. I’m still learning how to juggle the life of a newborn that wants to be held 24/7 and a busy toddler that needs to be reminded to empty his bladder every 15 minutes or so it seems.

My dear mother came for 4 days! It was so special to have her and as soon as she came my body went into crash mode or vacation mode or something like that because I didn’t lift a finger while she was here! =) She seriously spoiled me.

Chocolate Pecan Bars {THM}

  • Servings: 9x13 pan
  • Time: 25 min+30 min chill time
  • Difficulty: easy
  • Print

  • Shortbread Crust:
  • 2 1/2 cups almond flour
  • 1/2  cup powdered Sweetener
  • 1/2 tsp salt
  • 1/2 cup butter, chilled and cut into pieces
  • Place all ingredients in food processor until it forms nice crust-like texture. Line 9×13 pan with wax paper. Press into pan. Bake at 350º for 12-15 minutes. Cool.
  • Filling:
  • 3 1/2 cups pecans (toasted in oven till brown. Layer over crust.)
  • Cook 1 1/2 sticks butter
  • 9 TBSP heavy cream
  • 1/3 cup gentle sweet plus 1 TB.
  • 1/2 tsp salt
  • Cook till bubbly about 5/7 minutes
  • Add 1/4 tsp vanilla and a donk stevia
  •  Drizzle over pecans. Top with 1 cup lily chocolate chips. Keep refrigerated.
