Raspberry Cheesecake Muffins

When a friend meets me after church with a container of freshly picked raspberries and says, “Just because I’m thankful you’re my friend” it calls for baking something special. Raspberries are my favorite and I hope to have bushes of my own someday. I love friends and was reminded how a simple gesture like that can totally make someones day. Lemon Poppyseed Cake {with Cream Cheese Frosting}

One of my goals for this blog is to give you simple recipes using basic ingredients that you most likely have on hand. I love browsing through exotic blogsΒ and seeing all the gourmet dishes but half the time I don’t have 2 or 3 of the ingredients or the time to make it so I save the pin to my Pinterest board and often forget about it until a year or two later.

This cake is light and delicious with a touch of lemon and uses all basic ingredients (if you call heavy cream and cream cheese basic =)) so its the perfect go-to when your fridge is feeling empty. This frozen cheesecake whips up in no time and is pretty enough for guests. There’s nothing I love more than when my house is filled with friends! Yesterday was one such day. Mocha Cinnamon Rolls

You up to trying something new? Cinnamon rolls without any cinnamon at all! These are the Chocolate/Espresso rolls that the guys came up with in Tennessee. I was craving them the other day so I tried re-creating them… I can’t say they are an exact copycat but they’ve got that same delicious mocha flavor.

We won’t mention the calories in these boys. Or how addicting they are. I’ll just say, make at your own risk!

Packed full of butter, these are soft and melt in your mouth.

“Its the most wonderful time of the year!”

Christmas is just around the corner with all the joy that it brings. We’ll be taking the “sleigh” into my folks this year. It’ll be the first time we’re all together for at least a year and a half or two. So it’ll be a joyous occasion as we celebrate the birth of our Savior, Jesus Christ. Every time I stop and think about what “Christmas” really is, I am in awe of God and how He sent His only Son into this sinful world as a babe. A helpless baby. I can’t quite wrap my mind around that concept, Jesus the Son of God as a baby. When did He realize who He really was?
