Raspberry Cheesecake Muffins

When a friend meets me after church with a container of freshly picked raspberries and says, “Just because I’m thankful you’re my friend” it calls for baking something special. Raspberries are my favorite and I hope to have bushes of my own someday. I love friends and was reminded how a simple gesture like that can totally make someones day. Thanks Diane for spreading sunshine! Continue reading “Raspberry Cheesecake Muffins”

Peanut Dark-Chocolate Granola Bars

IMG_5792

If you follow my blog at all, you know by now that I’m a huge fan of peanut butter and homemade granola bars! Combine that with dark chocolate and you have something amazing.

Sioux Falls just opened an Aldi grocery store and I am in love. You can’t beat their prices! I’ve been buying things that I normally can’t justify. I picked up a box of granola bars that I intended to pack in Stan’s lunch but boy oh, when I tasted those things, I knew they were for me! The box of 6 bars was gone way too fast so I kept it for the ingredient list and decided to come up with my own version…and I love them all the same or even more because homemade is always better, right?  Continue reading “Peanut Dark-Chocolate Granola Bars”

Chocolate Pecan Bars {THM}

IMG_5753

If there ever was a recipe you Trim and Healthy Ladies need to make tonight yet, its this one! These showed up on my doorstep earlier this week and were they ever amazing! Charlene made them and had them delivered. How sweet is that?

Stan was gone for a day so I almost single-handedly ate the entire pan. When he did get to try them, lets just say, there weren’t too many left! Haha. But he told me I must get the recipe. Continue reading “Chocolate Pecan Bars {THM}”

Coates Granola Recipe

DSCF0736

I stumbled across the Coates Granola recipe a few months ago and have been loving it ever since. With only eight ingredients, it can be mixed together in a matter of minutes! The crunch of the nuts and sweetness of the maple syrup make it exceptionally delicious. This is the last granola recipe you will ever need.

A huge THANK YOU to Gretta Coates, for sharing your talents and time by personalizing this recipe with your beautiful photos. You are truly gifted and I’m so privileged to share some of your work here. Refreshing Rhubarb Punch

IMG_5513

Its rhubarb season! So go get yourself some rhubarb and make this punch. Its refreshing, delightful, and pleasing to the tastebuds. Its got orange and lemon in there as well, plus gingerale to give it some zip. Its fast, its easy, and again, delicious! I got the recipe from my mom and she got the recipe from her sister-in-law about 30 years ago…who got it from who-knows-who. Its one of those timeless recipes that gets passed from generation to generation…and this was before trim healthy mama so the answer is no, its not healthy. But it is made with rhubarb, which makes it sound good! Continue reading “Refreshing Rhubarb Punch”

Hearty Dinner Rolls

IMG_5491

Declan is constantly hungry and one of the things he asks for a lot is bread with butter and honey. So we combined a few of our favorite bread/roll recipes and came up with these hearty dinner rolls. The poppy seeds give them a crunch and the sunflower seeds add some great texture. Breads and dinner rolls are one of my favorite things to bake so I’m often experimenting with new recipes and techniques.

Grandma’s Caramel Pudding

IMG_5468

A Grandma is warm hugs and sweet memories. She remembers all of your accomplishments and forgets all of your mistakes. – Barbara Cage

Today I was thinking of my Grandma and her delicious Caramel Pudding and decided to give it a try again. I’ve almost given up hope that I’ll ever get it like hers. She was the pro of smooth caramel pudding! It brings back all sorts of nostalgic feelings and memories of family gatherings in her basement. She was a good cook and we feasted.  Continue reading “Grandma’s Caramel Pudding”
